Tangy Grapefruit Poke Bowl

Here is a Tangy Grapefruit Poke Bowl that you can make with any of your ancient grains, but add a little grapefruit and this will give you a lovely tangy flavor.

Grapefruit are high in fiber, which keeps you satiated, and can help balance blood sugar levels. Grapefruits contain nootkatones, chemical compounds which studies have shown to boost your metabolism and promote weight loss.

This combination of fiber and protein in addition to metabolism-boosting grapefruit is the perfect recipe to help you lose weight.

Ingredients
  • 4 oz grilled chicken
  • 1/2 cup your favorite ancient grain – quinoa, spelt, amaranth, farro, kamut
  • 2 cups leafy greens of choice
  • 1/4 teaspoon crushed garlic
  • 1/4 teaspoon Chia Seeds
  • 1/8 sliced Red Onion
  • 15-20 dried cranberries
    1/2 cup green, yellow, red or orange pepper, sliced
    1/2 grapefruit
Directions
  1. Combine all ingredients in a bowl except grapefruit.
  2. Squeeze grapefruit juice over salad for a tangy dressing.
