Chia Pancakes Deluxe

Chia seeds have a nutty flavor to them; they are a great way to include into your morning pancakes as they are loaded with antioxidants and have a high quality protein in them. They are packed with more calcium than milk, more omega-3s than salmon and more fiber than prunes; it’s the super seed that should be in your diet every day. This recipe is for 4 people with 545 calories per serving, so I would have it only as a treat every once and a while.pancakes - chia

Ingredients

  • 1 cup gluten-free oats
  • 1/4 cup almond meal
  • 1/4 cup ground Chia seeds
  • 1/4 cup shredded unsweetened coconut
  • 1 1/2 bananas, mashed
  • 2 eggs (or use 2 tbsp. ground chia mixed with 6 tbsp. water)
  • 1 tsp. baking powder
  • 1 pinch sea salt
  • 1 tbsp. coconut oil
  • 1 1/4 cup almond milk
  • 2 dashes cinnamon
  • 1 tsp. vanilla extract
  • Toasted pecans
  •  Chia seeds
  • Ground cinnamon

Directions

Add all ingredients to a blender, except bananas.

Blend until smooth, then add bananas and blend again.

Heat a skillet and grease with coconut oil.

Pour batter onto the skillet in circles and wait for them to bubble.

Flip and cook until golden brown on both sides.

Top with toasted pecans, sliced bananas, cinnamon and chia seeds.
